Effortless One-Bowl Oatmeal Raisin Cookies for Busy Bakers

Crisp around the edges but chewy in the middle with a hint of autumn spices -- what could possibly make this cookie recipe any better? Less dishes! The dough for these cookies uses only a single mixing bowl. That's a win in my book!


Ingredients

  • 3/4 cup butter, softened

  • 3/4 cup white sugar

  • 3/4 cup packed brown sugar

  • 2 eggs

  • 1 tsp vanilla extract

  • 1 1/4 cups all purpose flour

  • 1 tsp baking soda

  • 1/2 tsp salt

  • Ground cinnamon (measure with your heart)

  • Ground nutmeg (measure with your heart)

  • 2 3/4 cups rolled oats

  • 1 cup raisins


Directions

  1. Preheat oven to 350 F

  2. Cream butter, white sugar, and brown sugar until smooth

  3. Beat in eggs and vanilla extract

  4. Gradually mix in flour, baking soda, salt, cinnamon, and nutmeg. At this point the dough will be very sticky and appear too wet, however, this is normal. This recipe uses less flour than other cookies so that the oats can absorb the extra moisture

  5. Fold in the oats and raisins

  6. Drop tablespoon-sized balls of dough onto a lined baking sheet

  7. Bake 18-20 minutes and let rest on baking sheet for about 10 minutes while they finish setting before transferring to a wire rack
