Simple and Delicious: One Pot Chili Recipe for Busy Weeknights

As the temps and leaves start to fall, I can't think of a better dinner than chili to warm up with. This chili can be made in a single pot AND in under one hour, which makes it perfect for those busy weeknights!


Ingredients

  • Olive oil

  • 1 onion, diced

  • 2lbs lean ground beef

  • 2 & 1/2 tbsp ground cumin

  • 2 tbps granulated sugar

  • 2 tbsp tomato paste

  • 30oz black beans, drained and rinsed

  • 1 tbsp garlic powder

  • 2 c beef broth

  • 30oz diced tomatoes, including juice

  • 30oz red kidney beans, drained and rinsed

  • 8oz tomato sauce

  • 15oz canned corn, drained

  • Splash of Worcestershire

  • Salt & pepper to taste


Directions

  1. Add olive oil to a large pot and cook until translucent

  2. Add ground beef with Worcestershire and all herbs & spices. Cook until browned

  3. Add broth, diced tomatoes, kidney beans, tomato sauce, tomato paste, black beans, and corn (More broth may be needed to cover everything)

  4. Bring to a low boil and simmer uncovered 20-25 minutes, stirring occasionally

  5. Serve immediately with any desired toppings
